Ultimate Chicken Wings
For those of you that didn’t know yet, I LOVE CHICKEN WINGS!
To paint a picture of just how much this is the case, when I was in New York City for 10days I ate chicken wings at least 15 times. When I go to Nando’s all I ever order is 10 Chicken Wings. It is very very rare that I would ever light up the braai or BBQ without some wings to feed the belly and finally it’s a dream of mine to do a tour of american in the search of the best wings..
So it’s no surprise I’ve been working on a Chicken Wing recipe that can be used for braaing/BBQing, not to be confused with your typical Buffalo Chicken wings (I’ll post about this in the future)
Prepare the Chicken:
(Most people make the mistake of never breaking up the chicken before marinading and cooking. I can tell you know it changes the whole wing experience if you do this first)
The Magic Mix:
4 tbsp Cajun Power
1 tsp Smoked paprika
2 tbsp Sweet paprika
2-3 tbsp Peri-Peri (depending on your heat)
3-4 tbsp olive oil
2 tbsp Smokey BBQ sauce
Lets get our hands dirty:
Put the magic mixture into a bowl and stir until you have a thickish paste
Place all the chicken into the bowl and mix until all the chicken is completely covered
Leave the chicken to marinade for at least 1 hour (I prefer overnight)
Light up the BBQ or Braai at a medium heat and throw all the wings on.
Keep an eye on the wings, due to the heavy marinade they may start to look charred, simply keep turning them
The cooking time will vary depending on the flame, so if you are unsure if the chicken is cooked, take a knife and cut into some of the bigger wings.
If all the meat is cooked through and there is no red liquid coming out then BOOM it’s time for a piece of heaven.
I like to eat my wings with some mayonnaise and hot sauce on the side.
